Crazy Crazy

Things have been nuts around my house for weeks. My husband's health is worse than we thought in the beginning so he is more determined than ever to eat right!

It has been an expensive journey, we have blown our new budget week after week and I have to find a new way to bring in more money because things are so tight right now.

Tonight's Dinner

We had Buffalo Tofu tonight. My husband cooked it and I would say on a scale of 1-10 I give it a 6. It has some getting used to and my husband is going to try and add more breading when he frys it the next time. It was not half bad.

Vegan Pizza

Got a large Vegan Pizza from Whole Foods tonight...not bad at all. I was pleased. Plus I got it for free because when I showed up to pick it up they made it with real cheese by accident.

I will spill my heart out on my trials and tribulations of going this road to not only save my husbands life but to use this as a way to rebuild my marriage.

I will pass along recipes I find that I hope will be helpful to anyone out there struggling to do this too.

I will post deals I find to help you save money while eating healthy. I’m always up for a good deal. You can find all kinds of coupon deals and more on my other site HERE.

I will also share with you a few legit ways to make a few extra bucks every so often. There is not much money in the legit stuff but every bit helps!

My Vegan Emotional Roller Coaster

This has been a hard weekend. I am emotionally exhausted. We went over our grocery
budget by so much it is staggering. We spent $143 on groceries, out budget was $35.
Now, a lot of the large items like the arrow root (for thickening), Agave Nectar
(for sweetening) and a few other items will last awhile. However, I usually buy items
on sale and with coupons if I have them and stock up which was impossible to do
with many of the items I bought. I tried my hardest to keep the spending down but
it just wasn't possible. My husband has committed to living off of the food we have
for as long as possible while I try and make up for the budget blown.

The positive thing is that from Monday to Friday my husband lost 5 pounds. He is hoping to lose another 5 pounds in 5 days.
I’m very proud of his dedication.

We had a talk on Saturday night after I had an emotional meltdown over money. He promised he would not be picky on what he eats like organic etc. He just would prefer to avoid anything with egg or milk if he can help it.

There were items we bought from Whole Foods that could have been purchased at Pubilx for less money and he said that next time he will buy them there to save money.

My problem with the whole this is that we took an out of control grocery budget, and in 3 months cut it in half. The problem with our out of control budget is that we were not making enough money to support that budget. That is why I’m so afraid this new diet will blow our new budget, because the budget I whittled us down to is all we can afford right now.

I used my Swag Bucks to pay for my daughter’s birthday present and our PUR Waterfilter on Amazon…so thank goodness for Swag Bucks. What are Swag Bucks and how do you get them? Go HERE for my tutorial.

It was a whirlwind weekend and I’m so panicked still. If we can make it through until I get my quarterly bonus we can make up for all the groceries we blew money on this weekend. Ah!

Our First Whole Foods Trip

We spent $60 at WholeFoods...that is almost 2 weeks of groceries for us normally...I haven't been shopping for the regular stuff on our list yet and we blew our budget! I have been so anxious! My husband does not want our 1 year old to have organic cows milk. The doctor says Soy Milk is actually bad for babies/toddlers because it blocks the ability to absorb calcium. I won't give it to her but if we don't find a healthly solution soon he will just have to deal with it.

We did not get much for that money. The big expense was Arrow Root, Fake Honey/Sweetener, Vegan Maynoise. Each item was more than $5!

We had fake hotdogs...they were not good. I LOVE Morningstar and Boca stuff but these fake hotdogs...I don't think my husband liked them either.

I really wish my husband wouldn't be so picky...like he promised in the beginning.

I'm so pissed our friends keep feeding him more info. Referred him these videos and books...has my husband pissed off at the corporate farmers etc. We spent $30 today to plant a garden and we won't reap the benefits for a few months...i'm okay with planting a garden and i'm excited about it because I used to have a garden as a kid but things are so tight right now...I get anxiety for so little.

Where to Start

I am a crazy couponer who loves a bargain because we cannot afford to not coupon. Well My husband's friend got him reading up on being an all organic vegan. I have been a ball of anxiety for 2 weeks. At first my husband said he would just cut out the eggs, milk, meat etc but we would continue life as normal. Now my husband is getting so picky that i'm afraid we will go broke for him to "diet" like this. I know he wants to be healthy and he has a lot of health problems and I want him to be healthy but the reason I coupon is because we cannot afford our groceries without using coupons. Now my husband wants to buy all organic stuff and we can't do it.

I started this blog as an outlet for my emotions. I don't want to hurt my husband's feelings, i've already had to tell him he can't be picky about what we buy. I hope this is a phase...I really do. I'm okay with giving up meat but being so picky about what you eat that we can't afford our groceries is CRAZY!
